A Spring Soirée at Casino Mine Ranch

An evening of fire, flavor, and effortless indulgence. We’re excited to partner with local Chef Max Benson of North Fork Feast for this unforgettable experience. We’ll begin at the Raw Bar, where the oysters are ice-cold, the wine is crisp, and the first bites set the tone for something special. From there, we’ll meander—soaking in the golden-hour glow, grazing on exquisite hors d’oeuvres, and letting the night unfold at its own perfect pace.

As twilight settles, we’ll gather at the wood-fired hearth, where Chef Max will serve a feast straight from the flames—succulent pork loin with green garlic salsa verde, smoky tri-tip glazed in chipotle honey, and a spread of bright, seasonal sides. And just when you think you couldn’t take another bite, we’ll finish with something sweet—cinnamon-cardamom tea cakes kissed with earl grey and citrus.

This isn’t just dinner. It’s a moment in time—one meant to be savored. A progressive dining experience that moves with the evening, guiding you through the beauty of the property. No reserved seating, just the freedom to wander, taste, and take it all in.

🦪 Raw Bar Welcome at the Tasting Room | 5:00–6:00 PM
Select Oysters on the Half Shell, Wood-Fired Oysters Rockefeller, Truffle Butter Popcorn, Housemade Old Bay “Oyster” Crackers, paired perfectly with our Vermentino or Greco.

🍷 Passed Appetizers at the Trellis | 6:00–7:15 PM
Dungeness Crab Rolls, Artichoke Spread on Endive, Mortadella Crostini, Mushroom Tartine, paired with our Grenache Blanc or Grenache Noir.

🔥 Wood-Fired Feast in the Gardens | 7:30 PM
Pork Loin with Green Garlic Salsa Verde, Tri-Tip with Chipotle Honey BBQ, Grilled Asparagus & Potato Salad, Sourdough Garlic Bread, paired with our Mourvèdre or Zinfandel.

🍰 Dessert | 8:00 PM
Cinnamon Cardamom Sweet Potato Tea Cake Bites with Earl Grey Frosting, paired with our Late Harvest Vermentino or Marcel.
